Carbonara pasta is an iconic Italian dish consisting of spaghetti with pieces of bacon mixed with Parmesan sauce, eggs and freshly ground pepper. Italians traditionally prepare this dish without adding cream to sauce, since they do not boil carbonara noodles in small portions, usually 4-6 servings. But when we boil 1-2 servings, making pasta carbonara is extremely difficult. After all, cheese and egg sauce without cream can easily be melted in the heat of a large amount of freshly cooked hot pasta, and with pasta, which is prepared for 1-2 servings - cheese in the sauce melts unevenly. Therefore, in such cases, you cannot do without cream.

How to make

1. Prepare your ingredients. Ive already grated Parmesan.

2. Cut the bacon into small squares and place in a pan, fry until light golden brown. For the convenience of frying, you can add 1 teaspoon of olive oil (optional).

3. Put the grated Parmesan in a bowl, add a little olive oil (1 tsp) and beat the eggs.

4. Grind black pepper peas in a coffee grinder or crush with a wide knife on a cutting board. Freshly ground or freshly crushed pepper is very tasty.

5. Add ground black pepper to the mixture of parmesan and eggs in a bowl and mix everything with a fork until smooth.

6. Boil water in a saucepan, salt, add spaghetti and cook until al dente no more than 2 minutes.

7. In a saucepan, heat the cream without boiling. Remove the pot with hot cream from the stove and add the egg-cheese mixture to it.

8. Mix everything vigorously.

9. Drain the spaghetti in a colander and put in a bowl, pour the cheese sauce. Mix everything.
