A quiche is an open-faced French pastry, usually made of shortcrust pastry, filled with cream (milk) and cheese. The filling can be different, for example, leeks and bacon.

How to make

1. Prepare your ingredients.

2. Add the flour and cubed butter to the mixer bowl and grind into small crumbs.

3. Mix cold water and egg.

4. Add the butter and flour mixture to the bowl, make a well in it, pour the water and egg mixture, add a pinch of salt.

5. Knead the dough with your hands, do not knead for a long time, collect the dough into a ball, put it in a bag, put it in the refrigerator for a while while you prepare the filling.

6. Pour 2 tablespoons of olive oil into the pan.

7. Add finely chopped leeks, saut for about 5 minutes.

8. Fry finely chopped bacon in another pan.

9. Prepare a baking dish (diameter 27 cm). Make a French shirt. This means: brush with butter, sprinkle with flour, shake off excess flour.

10. Roll the dough into a layer, transfer it to the mold, form the sides, prick the bottom with a fork, put it in the freezer for about 15 minutes.

11. Grate the cheese.

12. Mix milk, 3 eggs, a little salt, add nutmeg.

13. Mix half of the cheese and sour cream (or sour cream).

14. Mix the egg mixture and the sour cream-cheese mixture, mix until smooth, you will get the pie filling.

15. Remove the cake base from the freezer, add the remaining half of the cheese.

16. Place the fried leeks on top of the cheese.

17. Place the bacon on top of the onion.

18. Fill the inside with the prepared filling, smooth it out. Bake in an oven heated to 180 degrees for 30-35 minutes.

19. Remove the cooled quiche from the mold and serve. Due to the fact that the baking form was well prepared, the cake was easily removed from it.
