I did not have a specific baking plan, I decided to combine all the ingredients that were at hand. This is how the dessert recipe appeared: how to make a lemon cake with pistachios and zucchini. So why not try using the usual zucchini? Additionally, for the cake, I make glaze with lemon juice, but even without them I get very tasty and juicy. Instead of lemons, you can use an orange.

How to make

1. Wash the lemon, grate the zest and squeeze the juice separately. Wash the zucchini and grate on a coarse grater.

2. Sift the flour, mix with salt, baking powder, soda.

3. Mix zucchini, lemon zest, eggs, lemon extract, vegetable oil, sour cream, sugar.

4. Cut the pistachios or crush them into small pieces.

5. Add a mixture of zucchini, lemons, and eggs to the dry ingredients along with the pistachios and coconut.

6. Stir the dough. Grease the baking sheet and pour out the dough. We bake the cake in an oven preheated to 180 degrees for 35-50 minutes.

7. Meanwhile, make icing: mix 2 tablespoons of lemon juice with icing sugar.
