7. Add the grated zest of two lemons and vanilla essences to the curd mass.

8. Pour the curd mixture evenly into the mold.

9. Place in a well-heated oven for 9-12 minutes. See that the top does not burn too much. It should stiffen and turn brown, but not become too brown.

10. Then reduce the temperature to 90-100 C and cook for 50 minutes. The cheesecake baked in the center sways a little, like souffle, but it should not be liquid. Then remove the cheesecake from the oven and let it cool completely.
