Red wine200 grams (Madeira, sherry, port wine)

How to make

1. We thoroughly clean the goose carcass, cut off the excess fat, the tips of the wings, the neck.

2. Rub the prepared carcass with a mixture of pepper, coriander and salt. We leave to marinate overnight in the refrigerator.

3. From one orange, grate the peel and mix with 100 g. of wine. Brush the goose with this mixture and put it back in the refrigerator for 3-4 hours.

4. Soak the prunes in the remaining wine. Wash the apples, peel them and cut them into half or quarters as you like.

5. We stuff the goose with prunes and apples. With wooden toothpicks, we pin the skin to the neck and tail. Put on a greased baking sheet and place in the oven. The first 15 minutes we fry the goose at a temperature of 250 degrees, and then lower the temperature to 150 degrees. Bake for 2-2.5 hours, periodically pouring the goose with juice. About 15-20 minutes before the end of cooking, brush the goose with honey to form a beautiful golden crust.
