How to make

1. Prepare your ingredients.

2. Wash the apples and cut them into quarters. Place in a heat-proof container with a lid and cook, this can be done in the microwave for 5-7 minutes (cooking time depends on the type of apple).

3. While the apples are baking, grind the cranberries in a blender.

4. After the apples are baked, all that remains is to separate the pulp from the peel with a spoon. It is better not to take the released juice, excess moisture is not needed.

5. Weigh 100 grams of apples and 100 grams of crushed cranberries. Do not rub the cranberries through a sieve, the marshmallow will be tastier and more beautiful with the remaining peel.

6. Soak the agar according to package directions.

7. At first, beat the whites until fluffy. Then add cranberries and apples to the protein.

8. Beat the proteins and puree until fluffy.

9. Pour sugar into a pot, add soaked agar-agar, heat on medium heat until it boils. Cook, stirring, for 2 minutes after boiling or according to package directions.

10. Turn off the agar syrup when it starts bubbling and thickening. Pour the syrup into the protein-berry puree in a thin stream.

11. Beat the marshmallow mixture until it becomes very fluffy and begins to thicken, and the whisk of the mixer does not leave clear relief marks. Transfer the marshmallow puree to a piping bag.

12. Place the marshmallows on the baking sheet. Prepare 2 standard baking trays in advance, as much as you need for this amount of marshmallow mass. Leave the marshmallows to dry, this will take at least 6 hours. The drying time depends on the quality of the agar used.

13. Put two at a time, roll the marshmallows in powdered sugar. Wipe off excess powder.
