Prepare this delicious gluten-free cake and your tasters will surely appreciate your culinary talent. The combination of almond and coconut flour flavors in the dough with cherries is incredibly successful. You can use frozen or fresh cherries, but the berries must be pitted. I used large eggs. The diameter of my baking sheet is 18 cm.

How to make

1. Prepare all the ingredients. Using a colander, wash the frozen cherries in warm water.

2. Carefully separate the egg whites and yolks into separate containers.

3. Put all the yolks in a large bowl and add the icing sugar.

4. Beat these ingredients with a mixer until you get a light mixture.

5. Add almond and coconut flour to this mixture and mix everything gently.

6. Put the egg whites in a separate dry bowl and add a pinch of salt. Beat the proteins with a mixer until stable peaks are formed.

7. Put the protein mixture in a bowl with the rest of the ingredients.

8. With a spatula, stir in the egg whites until smooth.

9. Cover the bottom of the baking dish with baking paper and lay out all the dough, smooth it with a spatula.

10. On top evenly distribute the cherries. Put the cake to bake in an oven already preheated to 180 degrees for about 35 minutes.
