Love baked goods with a lot of dried fruits and little dough? This recipe is for you! The incredible aroma and taste of spices, dried fruits, poured into cognac, will not leave anyone indifferent. You can use dried fruits and spices at your discretion. I used an already prepared mixture of spices for gingerbread cookies. Also use jam to your taste, I used feijoa jam. Before cooking, all products must be at room temperature.

How to make

1. Prepare all the necessary ingredients.

2. Wash and dry the dried fruits. Cut large ones into pieces. Put light and dark dried fruits in different jars and pour syrup, close tightly. To do this, mix sugar, water and cognac. Bring everything to a boil, boil for 2 minutes and cool completely. Leave them for 12 hours.

3. Put the dried fruit in a sieve and let the syrup drain completely.

4. Beat soft butter with sugar into a fluffy mass.

5. Beat the egg into the butter and beat well again.

6. Pour honey, jam, spices into the mixture and whisk.

7. Add both flour and a pinch of salt, stir with a spatula.

8. Add dried fruit to the dough and mix.

9. Line the cake shape of 11 x 20 centimeters with baking paper. Put the dough in a mold and spread it evenly.

10. Cover the top with foil and place in a hot oven. Bake the cake at a temperature of 140 degrees for 2-2.5 hours. After baking the top of the cake with syrup and cool completely, without removing it from the paper until completely cooled.

11. Wrap the cake in baking paper and store in the refrigerator for at least two weeks. After that, sprinkle with powdered sugar and decorate to your liking.
