I think many older people remember tomatoes that were preserved in wooden barrels. They were fragrant and very tasty. I offer a recipe for such tomatoes, only in a jar. Tomatoes with a dense interior, thick skin and medium size are best suited for this preparation. Canning time depends on the size of the fruit and your taste. It is best to put smaller tomatoes on top. You can use whatever greens you have on hand or buy your own.
