1. Prepare your ingredients.

6. Knead the dough, knead for a long time, 7-10 minutes. Knead until the dough becomes smooth and elastic until the dough stops sticking to your hands. Put the dough in a bowl that can be lightly anointed with vegetable oil. Cover with cling film and put in a warm place for 1.5-2 hours

7. While the dough rises, do not waste time, start preparing the filling. Peel the apples, cut into small cubes, simmer in a pan with butter for 5-7 minutes.

8. Add cinnamon to the apples, stir and cool completely to room temperature.

9. To prepare the crumbs (infusion from flour, sugar and butter), mix 80 grams of chilled butter, cut into cubes, 130 grams of sugar and 100 grams of flour. Grind the flour mixture by hand into fine crumbs and store in the refrigerator until used.

10. During fermentation, the dough will increase approximately twice.

11. Divide the dough into 8 equal parts weighing about 80 grams. Roll them into a ball. Cover with cling film and leave for 5-7 minutes.

12. Roll out a thin pancake the size of a baking sheet from the dough and sprinkle with crumbs on one side.

13. Cover with the other side of the dough and put the crumbs on top.

14. Put the apple filling on both sides in the form of "triangles".

15. Wrap both edges towards the center so that two croissants come out.

16. Place the croissants in a form with a diameter of 25-27 cm, anointed with butter and sprinkled with flour. Let it rise for 40-50 minutes.

17. Before baking, brush the cake with the remaining egg.
