Dumplings can be prepared with different fillings. In this case, it's sauerkraut, fried with onions and tomatoes. This version of dumplings is somewhat unusual, but the taste will spoil you. Sauerkraut should be fried with onions and tomato paste. I make the dough with hot water (almost boiling). I really like this version of the dough, the prepared dumplings cook well, the dough does not tear.

How to make

1. If you haven't tried sauerkraut dumplings yet, you're missing out. I strongly recommend cooking them according to this recipe. Determine the amount of sauerkraut according to the amount of dough.

2. Cut the cabbage to make it tastier to eat later.

3. In the meantime, fry finely chopped onions (1 pc.). When the onion turns golden, you can add the cabbage.

4. Cook for 2 minutes, stirring constantly, then add the tomato paste and cook for another minute. Add 100ml water, cover and reduce heat. Darken the "filling" until a large part of the liquid evaporates. The filling should not be too dry.

5. Now you need to knead the dough: heat the water to a temperature of 65-70 degrees, add salt and flour. Knead the dough quickly. Leave it for 20 minutes, but be sure to cover it so that the dough does not dry out.

6. You can make dumplings the way you like. I do it manually without any special tools. Divide the dough into "sausages" and then cut into small pieces.

7. Roll out each piece and spread the filling in the middle. Then I fasten in the usual way, shaping the edges nicely.

8. While the dumplings are being formed, put the pot on the fire and boil the water. Add a little salt and put the dumplings there. Meanwhile, you still need to fry the remaining onions.

9. I do this with a vegetable "scented" oil. I always put fried onions on the finished dumplings, the taste is simply amazing.
