Fantastically delicious, summery cake. For the filling, you can use any fruits or berries. You can also take any useful flour or mix it in several types. Dietary cake with fragrant apricots is prepared from the simplest ingredients. It has a very delicate taste, with a light apricot sourness and incredible aroma. Such a delicious, sunny cake will decorate your morning with a cup of fragrant coffee or tea. If you are not sure about the quality of the form, grease it with a little oil or line it with parchment. In the off-season, use canned apricots, preferably without sugar. Use the sweetener of your choice and preference.

How to make

1. Prepare all the necessary ingredients.

2. To prepare the dough, put soft cottage cheese in a bowl, add salt, sweetener and egg. Mix everything until smooth.

3. Add both types of flour, baking powder.

4. Knead a soft, plasticine-like dough.

5. Divide the dough into a shape with a diameter of 20-22 cm, raising along the sides. Send the dough to bake in an oven preheated to 190-200 degrees for 10 minutes.

6. While the base (dough) is baking, we prepare the filling. In a bowl, mix the soft cottage cheese, Greek yogurt, sweetener, cornstarch and egg. Stir until smooth.

7. Wash apricots, dry. Divide in half and remove the bone.

8. Remove the slightly fried base (dough) from the oven, lay out the filling.

9. On top of the filling, slightly immerse the apricot halves. Put the cake in the oven again and bake at a temperature of 180 degrees for another 30 minutes.

10. Depending on your oven, baking may take a little longer. As soon as the top of the cake is browned remove it!
