For honey cake lovers, I suggest making a cake "Elena". It differs from the classic honey cake both in composition and in its preparation. It does not need to be cooked for a long time. In this cake, the aroma of honey and the taste of nuts are perfectly combined. the cake will be more liked by those who like dry, not soft cakes, as it is not too soaked. Any nuts can be used, it is best to use linden honey, but not buckwheat, this will give bitterness. Cakes should become a little golden in color, do not overcook it, otherwise the cake will be cool. So that during the leveling the cakes do not slide out, pierce them with skewers.

How to make
-
1. Prepare all the necessary ingredients.
-
2. In a saucepan with a thick bottom, add chopped margarine, honey, sugar and beat the egg.
-
-
3. Mix everything and put on low heat. While stirring, heat the mixture until smooth and the sugar will dissolve. The mass should heat up, but not much. Remove the pot from the heat and add soda and citric acid. Mix everything thoroughly. The mass will begin to whiten and increase in size, this is normal.
-
4. Sift the flour and add in parts to the mixture, kneading until smooth dough. Cover and let stand for 20 minutes.
-
5. Divide the dough into 7-8 parts. Roll each of them between two baking popoiers into a thin cake. Beat it over the entire surface and squeeze it in a mold with a diameter of 18 centimeters, forming a circle.
-
-
6. Bake each cake in an oven preheated to 180 degrees until golden brown. It will take about 4-5 minutes. Put the cakes on top of each other with paper and let cool completely.
-
7. Crush the remnants into crumbs.
-
-
8. Toast and cool the walnuts, then chop.
-
9. Pour water into a saucepan, pour sugar and pour condensed milk. Put on medium heat and bring to a boil while stirring. Remove from heat and cool.
-
10. Add soft butter to the mixture and beat until smooth and fluffy.
-
-
11. Add chopped nuts and mix.
-
12. Grease each cake with cream.
-
13. Put the cakes on top of each other, smearing each with cream. Smear the top and sides with cream.
-
14. Sprinkle the top and sides with chopped crumbs and put in the refrigerator for 12 hours.
-
15. After a while, decorate the top of the cake with chocolate, berries or as you wish and serve.
