Today I want to debunk the myth that roll cake is difficult and time consuming. This apple and dried cranberry roll can be prepared quickly and practically in one go. Let's get started! As a rule, the biscuit roll is prepared separately from the filling or cream. This roll is made in one go. Apples are better to use sweet and sour. If you don't have cranberries, you can replace them with dried cranberries, raisins or chopped dried cherries. Nuts can also be taken according to your taste.

How to make

1. Prepare all the ingredients needed to make a quick apple roll with cranberries.

2. Coarsely chop the walnuts and fry in a dry pan for 5 minutes on low heat.

3. Wash and beat the eggs in a bowl. I use a 1 liter pot.

4. Add sugar and a small pinch of salt to the eggs.

5. Beat eggs and sugar for 5-6 minutes until fluffy.

6. Sift the flour through a fine sieve and mix it into the egg mixture. I usually sieve directly into the masa bowl.

7. Gently mix with a spatula until smooth. Do not mix for a long time so that the air bubbles do not burst and the biscuit remains soft.

8. Line a small baking tray with baking paper. Peel the apples and remove the core. Grate the apples on a coarse grater and squeeze out the juice. Arrange the apples in an even layer on the paper.

9. Distribute the blueberries evenly on the apple layer.

10. Spread the roasted nuts on the layer of apples with cranberries.

11. Pour the resulting biscuit dough on top of the apple layer and smooth it out. The easiest way to do this is with a plastic spatula.

12. Bake in a preheated oven at 180 degrees for 25-30 minutes until soft.

13. Dampen a clean towel and dry well. Spread the towel on the table and turn the biscuit so that the paper is on top. Wipe the surface of the paper with a damp cloth or wet hands and remove.

14. Roll the roll tightly with a towel and leave to cool.

15. Unfold the towel and place the roll on a cutting board, seam side down. Sprinkle with powdered sugar and decorate as desired.
