Many grocery stores today sell a wide variety of flours, and if for some reason you cant or don't want to use wheat flour, then you can easily substitute it. Pancakes made of rice flour together with chickpea flour turn out to be just as tasty and thin.

How to make

1. Prepare your ingredients. Eggs and milk should be at room temperature.

2. Crack two small eggs into a deep bowl and whisk until frothy.

3. Pour milk and butter, continue to beat.

4. Mix both types of flour, salt and sugar.

5. Beat the dough until smooth, leave for at least 20 minutes. Be sure to let the rice and chickpea flour swell.

6. After some time, grease the heated pan with vegetable oil, pour in half a scoop of batter and fry the pancakes for 30 seconds on each side. After the first pancake, it will become clear whether you need to add starch. If it is very difficult to turn the pancake and it breaks, then add 2 tablespoons of cornstarch. I didn't need it this time. Before each pancake, stir the batter with a ladle.
