This valuable fish has long been used in cooking. Mackerel contains up to 16.5% fat, but it is easily absorbed, so it is perfect even when on a diet. In addition, its meat is rich in vitamin B12, very tender and slightly sweet. Baked mackerel with vegetables in a sleeve is a great choice for the whole family (even for a late dinner). Mackerel is fried without oil due to its high fat content.

How to make

1. Since mackerel is quite fatty, it should be fried with vegetables in a sleeve. In this case, all the ingredients are prepared in their own juice. So, clean the fish and wash it thoroughly.

2. If you have fresh vegetables - fine, but in this case I use frozen ones. Mix asparagus, chopped onions and carrots, add potatoes, cabbage, tomatoes, peppers and eggplant. Adjust the amount of vegetables yourself.

3. Season the fish with herbs (rub it well inside and out). Place the vegetables in the sleeve and place the fish on top.

4. Evenly distribute all the vegetables in the sleeve. Tie the sleeve on one side, then insert the fish and tie the sleeve on the other side.

5. We send the fish to the oven heated to 200 degrees for 1 hour. Later, we reduce the heat to 180 degrees and bake, periodically checking the baking process.

6. After baking, remove the sleeve from the oven. We cut very carefully, because there will be liquid inside. Let the food stand for 5 minutes. Then you can serve it.
