In the hot summer, you no longer want hot, hearty soups and borscht. It's time for light vegetable first courses, and most importantly for cold ones. Today we have such a sorrel soup with cucumbers, onion letters and eggs. In summer, cold soups are very popular. Today we are preparing sorrel soup. To do this, pre-boil chopped potatoes, onions and sorrel. After that, chop a fresh cucumber, onion letters, hard-boiled eggs, parsley, dill and add to the soup. Serve cold sorrel soup with sour cream.

5. Add the crushed sorrel to the boiling soup. Boil for 5-6 minutes and turn off. Salt the soup to taste.

6. Hard-boiled eggs, cucumber, onion letters and parsley can be chopped and put in a saucepan. But I like to serve this soup in portions. Wash one cucumber and finely chop, put on a plate.
