If you're watching your figure or just love simple mashed vegetable soups, this recipe is for you. Everything is done in a short time, and the result is a hearty and tender soup. Use the recipe! For meat broth, the soup is soft and saturated. If you take young zucchini, there is no need to peel them, and ripe fruits need to be peeled and the seeds removed. If desired, you can add boiled meat or chicken to the soup and serve with toast.

How to make

1. Prepare all the necessary ingredients.

2. Pour vegetable oil into a thick-bottomed pot. Peel the onions, chop and put in a saucepan. Grate carrots on a coarse grater and, stirring, fry vegetables over medium heat for 5-7 minutes.

3. Clean the peppers and cut into pieces. Peel the garlic, cut into slices and, together with the peppers, add to the fried vegetables.

4. Wash the zucchini, cut off the tips and cut into cubes. Put the zucchini in a saucepan and simmer the vegetables covered over medium heat for 5-6 minutes.

5. Pour the meat broth into a saucepan with vegetables and cook everything for 10-15 minutes until the vegetables are ready.

6. Crush everything with a blender until smooth. Boil the grated soup until the first bubbles and remove from heat, cover with a lid. Pour zucchini soup with meat broth into bowls, sprinkle with chopped dill and serve.
