1. Prepare the ingredients. Grate the cheese on a coarse grater.

2. First, prepare the Mornay sauce, a delicate creamy cheese sauce based on Bechamel sauce. To do this, melt a piece of butter in a saucepan.

3. Add the wheat flour to the melted butter and stir with a whisk until the melted butter is completely absorbed into the flour.

4. Pour the milk little by little, constantly stirring the sauce with a whisk so as not to form lumps.

5. Cook the sauce over low heat until it becomes a porridge for grits. At the same time, do not stop stirring so that the sauce does not burn.

6. Remove the hot sauce from the heat, add salt, ground white pepper and a handful of grated cheese. Mix the prepared Mornay sauce with a whisk. Cover the container with sauce with cling film and cool.

7. Toast the bread in the oven or use a toaster.

8. On toasted slices of bread, apply French mustard in a thin layer.

9. Apply 2 tablespoons of Mornay sauce to the mustard and distribute with it the entire surface of the toast, including the edges.

10. Put a handful of grated cheese on top of the sauce.

11. Put two slices of ham on top of the grated cheese and spread a handful of grated cheese again. Coat the remaining bread toast with French mustard, Montre sauce and coat the sandwiches from top to bottom.

12. Brush a layer of remaining Monray sauce and grated cheese on the bread. Bake the prepared sandwiches in a preheated oven at 200 degrees for 15 minutes.

13. For a sandwich, cook an egg. Cook over low heat, without touching or stirring, without covering with a lid, for 5 minutes. Sprinkle salt and pepper on top of the egg. Put an egg cap on one of the sandwiches.
