Potato zrazes are tasty, quick to make and inexpensive. And if you put onion letter filling in them, you get an interesting and juicy dish. Such zrazai can be served as a side dish or as a separate dish with sour cream or sauce. Be sure to dry the onion letters well, otherwise the filling will be too watery, which will affect the appearance and taste of the zraz. Onion letters can be replaced with onions, but then frying will take longer to soften. Butter should not be replaced with vegetable oil, as it gives a creamy taste, which is much tastier.

How to make

1. Wash the green letters and dry them well.

2. Peel the potatoes, rinse and cook in salted water over medium heat until tender. Drain the entire broth and keep the pot over low heat to evaporate the remaining liquid from the potatoes. Remove the potatoes from the heat, crush until smooth and put to cool.

3. Break egg yolk into the mashed potatoes, add pepper and mix until smooth.

4. Sift the flour into a saucepan with mashed potatoes, stir until smooth dough and let stand a little.

5. Chop the onion letters and put in a pan with melted butter. Mix everything, salt and fry over medium heat for 2-3 minutes. Remove from heat and cool.

6. Divide the potato dough and the filling into the same amount. With wet hands, form a cake from each part of the potato dough and lay out the filling.

7. Close the filling with the edges of the cake, forming zrazs. Roll them in flour on all sides.

8. Pour vegetable oil into the pan, heat over medium heat and zrazus on both sides to golden brown. Approximately 3-4 minutes on each side. Remove from the pan and serve immediately.
