Irish oatmeal bread is very common in its homeland. This pastry is characterized by a traditional Celtic cross-shaped cut, which, according to ancient legend, protects the traveler. As a rule, buttermilk is needed to bake this bread, but if you do not have buttermilk, you should not replace it with kefir, it is better to make it yourself from warmed milk and freshly squeezed lemon juice. You should also not extinguish soda. And remember that soda dough does not tolerate prolonged kneading!

1. Before starting work, prepare all the necessary ingredients.

2. Pour the milk into a saucepan and heat over low heat to a temperature of 35-37 degrees. Then remove from the stove a saucepan with warm milk, pour freshly squeezed lemon juice, mix well with a whisk and leave to settle for 5 minutes.

3. Put the oatmeal in a blender bowl.

4. And turn on the device for about a minute.

5. In a bowl, mix the crushed oatmeal and milk with lemon juice.

6. Stir. Leave the bowl with oatmeal for 2 hours.

7. Put all the wheat flour in a bowl, add soda and stir these ingredients with a spoon to distribute evenly.

8. Then add flour and soda to the oat mixture. Mix everything very quickly with your fingertips and collect in a ball, you should do this in 4 minutes, no more. Kneading the dough for a long time is not suitable here, when baking you will get a ball of dough, and not bread.

9. Transfer the ball loaf obtained during mixing to a mold, the bottom of which you previously sprinkled with flour. Lightly press the future bread with your hand.

10. In the dough, make a cross-shaped incision. Place the tin with the future bread in an oven already preheated to 180 degrees and bake for 35-40 minutes for 30 minutes (not before!) Open the oven and check the degree of readiness.

11. Be sure to cool the bread and only then serve it. A slice of this bread, smeared with butter, is simply an incredible pleasure!
