I suggest making cottage cheese from regular kefir. This is the most budget option, which does not affect its quality. From the original product, it is distinguished by a slightly sour taste and low fat content. The dense, homogeneous consistency of the product allows you to perfectly keep the shape. Creamy cottage cheese can be used not only in the preparation of desserts, but also in the preparation of savory snacks, brusquets, sandwiches. If you use fresh herbs and garlic in the preparation of spread, prepare a small portion, as this product cannot be stored. When using a dry mixture of spices and herbs, the product can be stored in the refrigerator for up to three days.

-
Kefir1 liter (3.2% fat content) Salt
-
Sundried tomatoes
-
Garlic1/2 teaspoon (dried)
-
Italian herbs2 teaspoons (basil, thyme, oregano)

How to make
-
1. To make cottage cheese, you will need kefir with a fat content of at least 3.2%. Instead of kefir, you can use sour cream. The finished product will have a brighter creamy taste. From a liter of kefir, about 230 grams of cottage cheese are obtained. Without opening the soft packaging, put kefir in the freezer for the night until the product is completely frozen. Then remove the frozen kefir from the package and put it in a colander lined with several layers of clean and dry gauze.
-
2. Tie the ends of the gauze into a knot, put a colander with a gauze bag on a container into which, as the kefir melts, whey will drain. When the whey stops dripping, remove the cottage cheese remaining in the gauze and put it in a container. Whey can be used for other purposes, according to this recipe it is not needed.

3. Prepare the ingredients for cottage cheese spread for brusquets and sandwiches. In addition to sun-dried tomatoes, the Mediterranean note is emphasized by dry garlic and a mixture of herbs (basil, oregano, thyme).
-
4. Add a pinch of salt, a mixture of herbs and chopped sun-dried tomatoes to the cottage cheese. Stir.
-
5. Put the prepared spread in a dry glass container and let stand for a while.
